Pat the turkey dry with paper towels. Slide a spatula under the skin to loosen the skin on both sides of the breastbone.
- 2
Add the cumin, soy sauce, vinegar, vegetable oil, garlic, paprika, black pepper, smoked paprika, and oregano to a blender. Blend into a thick paste, about 1 minute. Reserve 1/2 cup of the rub in a bowl for a later step; pour the remaining rub over the turkey and use a spatula to work about 2 tablespoons under the loosened skin on each side of the breast. Rub the mixture over every part of the turkey. Let the turkey stand at room temperature for 1 hour.
- 3
Preheat the oven to 325 degrees F (165 degrees C). Fold a piece of aluminum foil into a rounded shape about the size of the turkey breast; set the foil aside.
- 4
Set the turkey on a rack in a large roasting pan. Tie the legs together at the bottom with kitchen twine. Spread 1/4 cup of the reserved wet rub inside the cavity; keep the remaining 1/4 cup for later. Sprinkle kosher salt over the entire top and sides of the turkey.
- 5
Roast the turkey in the preheated oven for 1 1/2 hours; place the foil tent over the turkey breast. Return to the oven and continue roasting for about 1 hour and 15 minutes. In a small bowl, combine the remaining 1/4 cup spice rub with 1 tablespoon vegetable oil and water. Brush the mixture over the top, legs, and sides of the turkey. Roast until an instant-read thermometer inserted into the thickest part of a thigh, not touching bone, reads 170 to 175 degrees F (75 to 80 degrees C), about 30 more minutes. Transfer the turkey to a serving platter and let it rest for at least 20 minutes, reserving the drippings in the roasting pan.
- 6
Place the creme fraiche, chicken broth, lime juice, jalapeno peppers, and cilantro in a blender and blend until smooth. Pour off excess grease from the turkey roasting pan, add the creme fraiche mixture, and set the pan over a burner on medium-high heat. Scrape the browned drippings into the sauce, bring to a boil, and cook until reduced by half and thickened, about 10 minutes. Whisk often to prevent lumps. Season the gravy with salt, black pepper, and cayenne pepper. Carve the turkey and serve with the pan gravy.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
