  1. 1

Preheat the oven to 350 degrees F (175 degrees C).

  2. 2

In an oven-safe saucepan, whisk together 3 cups broth, the 1/4 cup soy sauce, garlic, bay leaves, liquid smoke, miso paste, the 2 teaspoons black pepper, coriander, and salt. Add the celeriac to the saucepan and drizzle with oil. If needed, pour in up to 1 cup additional broth so less than 2 inches of the celeriac are above the liquid. Cover the saucepan.

  3. 3

Braise in the preheated oven, turning halfway through, until the celeriac is fork-tender, about 1 1/2 hours. Remove the celeriac from the cooking liquid, reserving the liquid, and let the celeriac cool about 30 minutes.

  4. 4

Meanwhile, for the marinade, whisk together beet juice, brown sugar, soy sauce, garlic powder, pepper, paprika, onion powder, mustard powder, and 3/4 cup reserved cooking liquid in a bowl.

  5. 5

Using a mandoline, cut the cooled celeriac into 1/16-inch-thick slices. Add the celeriac to the marinade in the bowl. If needed, add more reserved cooking liquid to cover the celeriac.

  6. 6

Let stand, stirring occasionally, about 20 minutes; then drain well. (You can chill the marinated celeriac in an airtight container for up to 5 days.)

  7. 7

Spread 1 side of each bread slice with 1 tablespoon Thousand Island dressing. For each sandwich, add 2 slices cheese, 2 tablespoons sauerkraut, and about 4 ounces braised celeriac.

  8. 8

Brush the outsides of the sandwiches with oil. Working in batches if needed, cook the sandwiches in a large skillet over medium heat, turning halfway through, until golden brown and the cheese is melted, 8 to 10 minutes.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
