  1. 1

Preheat the oven to 400 degrees F (200 degrees C).

  2. 2

Put the chicken, onion, and celery in a Dutch oven. Sprinkle salt over the top of the chicken.

  3. 3

Roast the chicken, uncovered, in the preheated oven until it is no longer pink inside, the skin is browned, and an instant-read thermometer inserted into the thickest part of a thigh registers 160 degrees F (70 degrees C), 45 minutes to 1 hour.

  4. 4

Move the chicken to a plate until it is cool enough to handle. Once cool, pick the meat from the bones; set the chicken breast meat aside in a bowl for another use. Cover the bowl of breast meat with plastic wrap and refrigerate. Discard the chicken skin.

  5. 5

Remove the chicken fat from the Dutch oven, leaving the browned flavor bits on the bottom of the Dutch oven. (See note if you want to reserve the drippings.)

  6. 6

Set the Dutch oven over medium-high heat. Return the chicken bones and the dark meat from the drumsticks and thighs to the pot. Add the garlic cloves, ketchup, and cold water. Bring to a boil, scraping up and dissolving the browned flavor bits from the bottom of the Dutch oven with a spoon. Reduce the heat to low and simmer for 3 hours, adding more water if needed to maintain the same level.

  7. 7

As the broth simmers, occasionally skim off and discard any foam that rises to the surface.

  8. 8

Remove and discard the bones, meat, and vegetables. Strain the broth through a fine-mesh sieve to serve or use in recipes.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
