Preheat the oven to 400 degrees F (200 degrees C), and line a 12x18-inch sheet pan with foil. Set a baking rack on top of the foil.
- 2
In a small bowl, mix together panko bread crumbs, Parmesan cheese, Italian herb seasoning, red pepper flakes, granulated garlic, smoked paprika, and salt and pepper to taste. Spread 2/3 of this mixture on a plate, and set aside.
- 3
Crack the egg into a shallow bowl and beat until the white and yolk are fully combined.
- 4
Lightly brush each zucchini piece with egg, then toss with 1/3 of the panko crumb mixture. Arrange the breaded zucchini on the prepared rack.
- 5
Dip the chops into the beaten egg and hold them over the bowl so the excess drips back. Set each chop on the reserved panko mixture, then turn to coat the other side, gently pressing the crumbs onto each chop.
- 6
Heat olive oil and butter in a large skillet over medium heat until the butter is melted and the sizzling stops. Carefully place each chop in the skillet and brown both sides, turning once, 3 to 5 minutes per side. Nestle the browned chops on the prepared rack alongside the zucchini pieces.
- 7
Roast in the preheated oven until the chops are no longer pink in the center and the zucchini is tender, 12 to 15 minutes. An instant-read thermometer inserted into the center of the chops should register 145 degrees F (63 degrees C).
- 8
Remove the chops from the oven and transfer to a serving plate.
- 9
If desired, broil the zucchini pieces until lightly browned, 2 to 3 minutes. See Cook’s Note.
- 10
Garnish with cherry tomatoes and fresh parsley, and serve warm.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
