Rock Salt-Crusted Standing Rib Roast

This prime rib is encased in a crust of rock salt, flour, water, onion soup mix, black pepper, and dried rosemary, creating a moist, tender roast with deep seasoning and fragrant herbal notes. Because the drippings are too salty to use, serve it with separately prepared au jus for a classic centerpiece at a holiday meal or special dinner.

  1. 1

Preheat the oven to 450 degrees F (230 degrees C).

  2. 2

Rinse the roast and pat it dry with paper towels. Mix the soup mix and pepper together in a small bowl; rub the mixture generously over all sides of the roast. Place the roast on a clean, dry baking sheet and let it rest for 30 to 45 minutes.

  3. 3

Mix the rock salt, flour, and rosemary together in a bowl. Gradually pour in water and mix by hand (wear gloves if desired) until the batter is thick and paste-like, adding more water if necessary.

  4. 4

Spread the salt batter over the bottom of a roasting pan to make a 1/2- to 3/4-inch-thick layer; reserve 1 to 2 cups of batter. Place the roast, with the bones facing down, on the batter in the center of the pan. Pull the batter up and around the roast until the meat is completely covered. Pat on extra batter if necessary. Insert an oven-safe meat thermometer into the roast so its gauge is visible from the front of the oven.

  5. 5

Cook in the preheated oven for 15 to 20 minutes. Remove from the oven and patch any holes or breaks in the coating with the remaining salt batter.

  6. 6

Return the roast to the oven and cook until the internal temperature reaches 130 degrees F (54 degrees C), about 3 hours, or until it reaches the desired doneness. Remove from the oven and let it rest until the internal temperature reaches 140 degrees F (60 degrees C), 20 to 30 minutes.

  7. 7

Chip off and discard the salt crust, then slice and serve.

How easyChef Pro scores recipes and products

easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.

The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.

Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.

For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
