Preheat the oven to 400 degrees F (200 degrees C).
- 2
Set the trimmed pork tenderloin on a plate or work surface. In a small bowl, mix together olive oil, grated garlic, red pepper flakes, cayenne, and cumin. Rub this oil and spice mixture all over the pork to coat the entire surface, then season generously with Kosher salt.
- 3
Preheat a coated cast-iron skillet over medium-high heat for about 2 minutes. Add the pork tenderloin and cook until deeply golden brown, about 5 minutes. Flip the tenderloin and cook for another 3 minutes. Move the skillet to the preheated oven and roast for 5 minutes. Remove from the oven, slide the tenderloin to one side of the skillet, and add the sausages. Roast for 10 more minutes, flipping the sausages halfway through, until the pork reaches an internal temperature of 145 degrees F (62 degrees C). Take the skillet out of the oven and tent with foil to rest for at least 10 minutes.
- 4
Meanwhile, in a bowl combine the coleslaw mix, cilantro, apple cider vinegar, jalapeño, lime juice, freshly ground black pepper, and salt. Use tongs to toss until the slaw is evenly mixed.
- 5
In a small bowl, combine the mayonnaise, Greek yogurt, lemon juice, horseradish, Worcestershire sauce, pepper, and kosher salt to make the peppercorn sauce. Taste and adjust the seasoning to your liking.
- 6
When ready to assemble, wrap the pita or naan in foil and place it in the oven while you carve the pork to warm it slightly. The oven does not need to be on; the residual heat from roasting the pork will be enough to warm the bread.
- 7
Split the sausages lengthwise down the center. Slice the pork tenderloin into 1/4-inch thick pieces.
- 8
To assemble, set a warm piece of pita or naan on a large plate. Arrange 4 to 5 slices of pork tenderloin on it, then add a sausage on top. Place about 1 loosely packed cup of the prepared slaw over that, then drizzle with about 2 tablespoons of peppercorn sauce. Roll up the wrap and enjoy.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
