Preheat the oven to 450 degrees F (230 degrees C).
- 2
Put the lamb shanks in a large bowl; drizzle with olive oil. Sprinkle with salt, black pepper, smoked paprika, cinnamon, and rosemary. Toss the lamb shanks to coat the meat evenly with the oil and seasonings.
- 3
Spread the onion slices and garlic cloves over the bottom of a heavy 9x12-inch baking dish. Arrange the lamb shanks on top of the onions and garlic.
- 4
Bake the lamb in the preheated oven for 30 minutes. Lower the oven temperature to 200 degrees F (95 degrees C).
- 5
Stir together the chicken broth and saba in a bowl. Pour the mixture over the lamb shanks. Cover the baking dish tightly with foil and set the baking dish on a baking sheet.
- 6
Bake the lamb in the oven until a knife slides into the meat easily, 2 1/2 to 3 hours. The meat should be tender but not falling off the bone. Use tongs to turn the shanks in the pan sauce. Increase the temperature to 350 degrees F (175 degrees C).
- 7
Return the shanks to the oven and bake, uncovered, until the meat is fork-tender and the sauce has thickened slightly, 10 to 15 minutes. Turn the shanks in the sauce after 10 minutes and check for tenderness; if still not tender enough, return to the oven for another 10 to 15 minutes and test again.
- 8
Move the lamb shanks to a bowl and keep warm. Strain the pan juices into a saucepan and set over medium heat. Bring to a boil and cook, stirring often, until thickened, about 5 minutes. Skim off any excess grease from the surface of the sauce. Taste and season with salt; stir in fresh rosemary. Serve the sauce drizzled over the lamb shanks.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
