Samoon – Iraqi Diamond-Shaped Flatbread features a thin, gently crisp exterior with a tender, airy crumb and a hint of buttery richness. Samoon – Iraqi Diamond-Shaped Flatbread

    Whisk the flour, powdered milk, yeast, sugar, and salt together in a large bowl. Add the butter and work it in with your hands until the mixture looks like coarse crumbs.

    Gradually add the water to the flour mixture, mixing well with your hands after each addition. When the dough comes together, turn it onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.

    Lightly oil a large bowl with vegetable oil. Place the dough in the bowl and turn it to coat with oil. Cover with a towel or plastic wrap and let it rise in a warm place until doubled in size, about 1 hour.

    Gently punch down the dough. Divide the dough into 12 equal pieces and shape them into balls. Cover with a light cloth and let rest for 15 to 20 minutes. The dough may expand, but it is fine if it does not.

    Place a ball of dough on a lightly floured surface and press it with the palm of your hand. Bring two opposite sides of the dough together and pinch. Repeat with the remaining opposite sides. Pull and press the dough to make a flat, elongated, diamond-like shape. Place on a lightly greased baking sheet. Repeat with the remaining dough. Cover with a cloth and let rest for at least 10 minutes.

    Preheat the oven to 450 degrees F (230 degrees C).

    Mix the water, flour, and sugar for the paste in a small bowl. Brush it over the flatbreads and sprinkle with sesame seeds.

    Bake the flatbreads in the preheated oven in batches until golden brown, 7 to 10 minutes.
