Put the potatoes in a large pot, cover with salted water, and bring to a boil. Lower the heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain, then let steam dry for 1 to 2 minutes.

Meanwhile, heat 1/4 cup oil in a skillet over medium heat. Add the onions; cook and stir until softened and translucent, about 5 minutes.
