Shrimp Gumbo

Shrimp Gumbo brings together juicy shrimp, smoky hot Italian sausage, and a trinity of onions and peppers simmered in spiced stewed tomatoes. Shrimp Gumbo

    Heat oil in a large stockpot over medium-high heat. Add onion, bell pepper, and jalapeno, and cook until tender, about 5 minutes. Stir in the garlic and cook until fragrant, about 1 minute.

    Pour the liquid from the tomatoes into the stockpot. Put the tomatoes on a cutting board, dice them, and add them to the pot. Add chicken broth, rice mix, and the seasoning packet, cover, and bring to a boil. Lower the heat and simmer until the rice is tender, about 25 minutes.

    Add the sliced sausage and simmer for 5 minutes. Stir in the shrimp, and cook until they turn bright pink on the outside and the meat is opaque, about 3 minutes more.
