Skillet Chicken with Garlic-Knot Butter
  1. 1

    Assemble all the ingredients.

  2. 2

Pat the chicken dry with paper towels and season it all over with 1 teaspoon salt and 1/2 teaspoon pepper; set aside.

  3. 3

Heat the oil and 2 tablespoons of the butter in a large skillet over medium-high. Add the chicken in an even layer, working in batches if needed; cook, turning once halfway through, until browned and a thermometer inserted into the thickest part of the chicken reads 165 degrees F (74 degrees C), 3 to 4 minutes per side. Using tongs, remove the chicken from the skillet to a plate; set aside. Do not wipe the skillet.

  4. 4

With the skillet off the heat, add the remaining 4 tablespoons butter and stir until melted, about 1 minute. Add the garlic and stir until fragrant, about 30 seconds.

  5. 5

Return the skillet to medium heat, and add the chicken in an even layer along with any accumulated juices. Add the parsley and the remaining 1/4 teaspoon each salt and pepper; cook, turning the chicken occasionally, until heated through, about 1 minute.

  6. 6

Remove from the heat. Sprinkle evenly with Parmesan cheese and garnish with additional parsley. Serve immediately with lemon wedges.

  7. 7

Serve immediately with lemon wedges. Recipe developed by Melissa Gray.
