    Fill a large pot with water. Attach an immersion circulator to the pot. Set it to 130 degrees F (54 degrees C) and set the timer for 35 minutes.

    Lightly season the cod with salt and pepper. Place 1/2 of the lemon zest, 1 teaspoon butter, and 2 lemon slices on each piece.

    Divide the shallot slices between 2 resealable plastic bags. Set a cod loin on top of the shallots. Seal the bags, leaving a small corner open.

    Lower the bags into the preheated water and submerge them until all the air is pushed out. Seal the corners and start the timer.

    When the timer ends, remove the bags. Carefully move the cod to serving plates. Spoon 1 tablespoon of the cooking liquid from each bag over each loin. Garnish with extra lemon slices.
