Fill a medium pot with warm water. Attach the sous vide device and set it to 123 degrees F (51 degrees C) to preheat.
- 2
Remove the tough muscle from the sides of the scallops, if there is any, and lightly season with salt and pepper. Place the scallops in a resealable plastic bag and expel all the air using the water immersion method.
- 3
Lower the scallops into the preheated water in the pot and cook for 30 minutes.
- 4
Take the scallops out of the bag and pat them very dry; if the scallops are wet, they will not sear properly.
- 5
Heat olive oil in a small skillet over medium-high until it shimmers. Sear the scallops in the hot oil until the bottoms are lightly browned, about 2 minutes. Flip and cook 1 minute more. Transfer the scallops from the skillet to a warmed dish.
- 6
Add the garlic to the skillet; cook and stir until fragrant, about 30 seconds. Deglaze the skillet with the white wine and lemon juice, scraping up the browned bits. Stir in the parsley and Cajun seasoning; simmer the sauce for 2 minutes. Stir in the butter just until melted.
- 7
Spoon the sauce over the scallops; sprinkle with the green onion tops to serve.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
