Make the sauce: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, brown sugar, sesame oil, Thai chiles, chile-garlic sauce, ginger, fish sauce, and pepper until smooth. Set aside.
- 2
Make the noodles: Heat 2 tablespoons olive oil in a large wok or nonstick pan over high heat. Cook and stir the chicken in the hot oil until almost cooked, about 3 minutes. Pour in 1/4 cup sauce and continue cooking until the chicken is no longer pink in the center and the juices run clear, 1 to 2 minutes more. Transfer the chicken with its juices to a medium bowl.

Reduce heat to medium-high. Heat the remaining tablespoon olive oil in the same wok or pan used for the chicken. Add the carrots; cook and stir until just softened but still crunchy, about 3 minutes. Stir in the bell pepper; cook until softened, about 1 minute. Add the reserved chicken with its juices, the remaining sauce, green onions, bean sprouts, and cilantro. Cook and stir until just heated, about 1 minute. Keep warm.

Meanwhile, place the noodles in a large bowl and cover with hot water. Set aside until the noodles are softened, about 5 minutes. Drain.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
