To make the cranberry filling: Soak 1 cup dried cranberries in the boiling water for 20 minutes. Drain the cranberries, reserving 1/4 cup of the soaking water. Combine the cranberries, the reserved water, 2 tablespoons pine nuts, cinnamon, cloves, and 1 tablespoon brown sugar in a food processor. Process until finely chopped, then set aside.
- 2
Bring the chicken stock to a boil over high heat. Reduce the heat to medium and simmer until the stock is reduced to half its original volume, about 15 minutes. Stir in the white wine, red wine, cranberry juice, and 1 tablespoon of brown sugar. Continue cooking until the sauce reduces by half again, about 10 minutes. Keep warm.
- 3
Preheat the oven to 400 degrees F (200 degrees C).
- 4
Cut a pocket into the side of each pork chop, about 3/4 of the way through. Stuff each pork chop with the dried cranberry mixture, then season all sides with salt and pepper to taste. Heat the olive oil in a large, ovenproof skillet over medium-high heat until it just begins to smoke. Sear the pork chops on one side until golden brown, 3 to 4 minutes. Turn the pork chops and cook a few more minutes until the other side is browned as well.
- 5
Pour 1 cup of the sauce into the skillet and bring it to a simmer. Transfer the skillet to the preheated oven and bake until the pork is no longer pink in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should register 145 degrees F (63 degrees C).
- 6
To serve, place each pork chop on a warmed dinner plate and spoon the sauce from the skillet over the top. Sprinkle the pork chops with 2 tablespoons dried cranberries and 2 tablespoons toasted pine nuts for garnish. Serve with the remaining cranberry sauce.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
