Combine black pepper and smoked paprika in a bowl; season one side of each chicken breast with the black pepper mixture. Turn each chicken breast over and season the other side with about 1 1/2 teaspoons ground chipotle per chicken breast. Wrap the chicken breasts in plastic wrap and refrigerate for 8 hours to overnight.

Bring a pot of water to a boil; add the vegetable bouillon and rosemary. Stir the carrots, mushrooms, celery, and garlic into the boiling broth; cook until the vegetables are tender, about 10 minutes. Use a slotted spoon to strain the vegetables from the broth and transfer them to a bowl.

Preheat the grill to 300 degrees F (150 degrees C). Soak 8 toothpicks in a bowl of water.

Remove the plastic wrap from the chicken breasts and place them chipotle-side down on a work surface. Spoon the vegetable mixture onto each chicken breast; roll each chicken breast around the filling. Secure each breast with 2 toothpicks. Season the outside of the rolls with more ground chipotle.

Grill the chicken breasts until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C). Brush the chicken breasts with barbeque sauce; cook until the exterior is caramelized, about 10 more minutes.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
