Thick, Chewy Flour Tortillas

Thick, Chewy Flour Tortillas offer a tender bite with a gentle chew and clean flavor thanks to canola oil instead of lard. Their slightly puffy texture makes them perfect for wrapping hearty fillings or serving warm alongside stews and grilled meats. Enjoy them fresh off the skillet for tacos, quesadillas, or as a cozy side at dinner.

Thick, Chewy Flour Tortillas
  1. 1

Stir the flour, baking powder, and salt together in a large bowl.

  2. 2

Stir the water and canola oil together in a separate bowl. Mix this into the flour mixture with a fork until the dough comes together in a ball, adding 1/4 cup water if the dough is too dry.

  3. 3

Knead the dough until smooth, 3 to 4 minutes. Divide it into 14 egg-size balls. Cover the bowl with a cotton towel. Let the dough rest for 10 to 15 minutes.

  4. 4

On a floured work surface, roll 1 ball of dough into an 8-inch tortilla. Repeat with the remaining dough.

  5. 5

Preheat an ungreased cast iron griddle over medium-high heat. Place 1 tortilla on the hot griddle; cook until browned spots appear, about 1 minute per side. Transfer to a plate and cover with a cotton towel to keep warm. Repeat with the remaining tortillas, stacking them under the towel.
