- 1
Preheat the air fryer to 400 degrees F (200 degrees C).
- 2
Put the prepared apples in a medium saucepan. Drizzle lemon juice over them, then add water and stir. Sprinkle brown sugar and 1/4 teaspoon cinnamon over the apples; stir again. Cook over medium-low heat, stirring occasionally, until the apples are as soft as you like, about 40 minutes.
- 3
Sprinkle the apples with white sugar, then stir again. Cook for 5 more minutes. Remove the saucepan from the heat. Let the mixture cool for about 10 minutes.
- 4
Place a small bowl of water near your work area. Position an egg roll wrapper in front of you with a point at the top and bottom. Spoon 1 to 2 tablespoons of the apple mixture across the center of the wrapper.
- 5
Fold the bottom point of the wrapper up over the filling, tucking the end around it. Gently roll once. Moisten the sides of the roll with water and fold the edges over to form a small purse shape.
- 6
Roll the wrapper up the rest of the way and brush with water to seal. Lightly brush the finished roll with water. Mix 1/4 cup white sugar with the remaining 1 teaspoon cinnamon in a bowl. Gently roll the egg roll in the cinnamon-sugar mixture. Repeat with the remaining filling and wrappers.
- 7
Line the air fryer basket with parchment paper and carefully place the finished egg rolls on it. Air-fry for 7 minutes, then turn them over. Continue air-frying until light golden brown, about 7 minutes more.

How easyChef Pro Scores This Recipe
easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.
The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.
Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.
Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
