Assemble all the ingredients.
- 2
In a large saucepan, mix the apples, sugar, lemon juice, cinnamon, and salt. In a small bowl, whisk together 1/4 cup of the water with 1 tablespoon of the cornstarch until smooth; add to the saucepan and stir to combine.
- 3
Bring the apple mixture to a boil over medium-high heat, stirring occasionally. Lower the heat to low, cover, and cook, stirring once or twice, until the apples are tender-crisp, about 8 minutes. Uncover and cook over low heat, stirring occasionally, until the apples are tender, about 8 minutes. While the apples cook, stir together 1 1/2 teaspoons water and 1 teaspoon cornstarch in a small bowl until smooth. Stir this into the tender apple mixture; cook, stirring often, until the sugar-cinnamon mixture is very thick and coats the apples, about 2 more minutes.
- 4
Remove from the heat and spread the mixture in an even layer on a large plate. Refrigerate until cool, about 15 minutes.
- 5
While the apple mixture cools, pour oil to a depth of 2 inches in a medium Dutch oven; heat over medium-high until a thermometer registers 350 degrees F (175 degrees C).
- 6
Meanwhile, place one egg roll wrapper on a clean work surface with a corner pointing toward you. Spoon about 3 tablespoons of the cooled apple mixture into a 3 1/2-inch log across the lower third of the wrapper. Dip your fingers in beaten egg and lightly brush the edges of the wrapper. Roll the bottom corner up and over the filling, then tuck it under the filling. Fold the left and right corners tightly over the filling to enclose it, then continue rolling away from you to form a classic egg roll shape. Place the egg roll, sealed side down, on a large plate. Repeat with the remaining apple mixture and egg roll wrappers.
- 7
Working in 3 to 4 batches, add the egg rolls to the hot oil and fry, turning occasionally and keeping the oil at 350 degrees F (175 degrees C), until golden brown and crispy all over, about 4 minutes. Transfer to a paper towel-lined plate to drain.

How easyChef Pro scores recipes and products
easyChef Pro analyzes up to 41 nutrients using data sourced from USDA and other verified food databases. Its scoring method uses the nutrients relevant to nutrition quality, calorie density, processing level, and your selected health goal. Recipes and food products get a health score from 0 to 100, calculated using consistent rules instead of being estimated by AI. The same nutrition data, serving size and health goal will produce the same result.
The calculation evaluates nutrients, calorie density, processing level, and how well the food supports your selected health goal. Protein, fiber, vitamins, minerals and other beneficial nutrients can strengthen the score. High amounts of sodium, saturated fat, added sugar and other nutrients may lower it.
Your health goal also matters. easyChef Pro evaluates recipes and products across six health areas and adjusts their importance for your selected goal. This means the same food may be a better fit for one health goal than another.
For recipes, changing an ingredient, quantity or serving size changes the nutrition and may change the score. Remix the recipe in easyChef Pro to calculate fresh nutrition and scores for the version you actually make. Product scores are based on the nutrition and serving information associated with that specific product.
