    Put the pinto beans in a large container, cover with several inches of cool water, and let sit for 8 hours to overnight.

    Cook and stir the beef in a large stockpot over medium-high heat until it is crumbly, evenly browned, and no longer pink, 7 to 10 minutes; drain and discard the grease from the pot.

    Drain the pinto beans and add them to the stockpot; add the onions, celery, carrots, garlic, red bell peppers, jalapeno peppers, Anaheim peppers, poblano peppers, diced tomatoes, guajillo chile powder, cumin, oregano, coriander, cinnamon, and hot pepper sauce. Lower the heat to medium-low and let the mixture simmer for about 3 hours.

    Stir the beef granules into the chili and keep simmering until the beans are very tender and break apart easily, 1 to 3 hours more, adding water as needed to keep the beans and vegetables covered with liquid. Thicken the chili with masa harina if you want a thicker consistency. Season with salt just before serving.
