Oven-Roasted Artichokes with Garlic Herb Butter
  1. 1

Preheat the oven to 425 degrees F (220 degrees C).

  2. 2

Trim 1 inch from the tips of the artichokes. Trim the stems and sharp leaf tips. Halve the artichokes lengthwise; use a spoon to scoop out the chokes.

  3. 3

Rub the cut sides with 1 lemon half; cut that lemon half into wedges.

  4. 4

Drizzle the cut sides of each artichoke half with water and extra-virgin olive oil. Sprinkle with salt and black pepper.

  5. 5

Cut the remaining lemon half into 4 slices. Place a lemon slice on each artichoke half and wrap each half tightly in foil.

  6. 6

Place the foil packets in a baking pan. Bake until the artichokes are tender at the base, about 45 minutes.

  7. 7

Melt the butter and garlic in a small saucepan over low heat. Stir in the parsley.

  8. 8

Serve the artichokes with lemon wedges and the herb butter. Sprinkle with pepper.
