Assemble all ingredients. Preheat the oven to 450 degrees F (230 degrees C). Grease a large 15x10-inch casserole dish with 1 tablespoon of melted butter or oil.

Place the beef, salt, black pepper, garlic powder, red onion, pickles, and 4 ounces of shredded cheese in a bowl, and mix with a fork until evenly combined.

Divide the beef mixture into 8 equal portions. With damp fingers, shape 1 portion into a log and gently press it onto the bottom of a hot dog bun. Lightly press the bun together to enclose the meat, and set the stuffed bun in the baking dish with the meat facing straight up. Repeat with the remaining portions until all 8 buns are stuffed.
