In a large bowl, combine 1 1/4 cups sifted flour, warm water, shortening, sugar, salt, and yeast; beat by hand for 300 strokes or with an electric mixer for 3 minutes. Stir in the remaining 1 3/4 cups sifted flour, scraping the bowl often, until the dough is smooth. Cover with a clean cloth and let rise until doubled in size, about 1 hour.

Lightly grease a 9x5-inch loaf pan. Gently punch the dough down; it will be sticky. Spoon it into the prepared loaf pan, patting it down and shaping it with floured hands. Cover and let rise for 30 minutes.
