    Lightly score the hot dog casings from end to end on four sides to help them stay flat as they cook. Cut into 1/2-inch slices.

    Melt the butter in a large pot over medium heat. Add the onions, poblano pepper, celery, and cayenne pepper. Season with salt and pepper. Cook, stirring, until the vegetables are soft and the onions are translucent, 5 to 7 minutes.

    Stir in the hot dog slices and cook until warmed through and the hot dog fat blends with the butter, about 3 minutes. Add the brown sugar, ketchup, mustard, and Worcestershire sauce; pour in the chicken broth. Stir in the beans. Raise the heat to bring the mixture to a simmer; lower the heat to maintain a gentle simmer and cook until the flavors come together, about 30 minutes. As the beans cook, use a wooden spoon to mash some against the side of the pot to thicken the stew. If it becomes too thick, add more broth.
