Seasoned Black Beans with Onion and Pepper bring together tender legumes simmered with aromatic onion, green bell pepper, and garlic. Bay leaves, cumin, and oregano add warmth, while a splash of white wine, vinegar, and olive oil brightens the finish. Seasoned Black Beans with Onion and Pepper
  1. 1

In a medium stockpot, combine the soaked beans (see Editor's Note), water, onion, green pepper, garlic, bay leaves, salt, cumin, and oregano. Bring to a boil over medium-high heat; then lower the heat to low. Simmer, covered, until the beans are tender, about 1 hour. Stir occasionally and add water as needed so the beans do not dry out or scorch.

  2. 2

When the beans are tender, stir in the wine, vinegar, and olive oil.
