Blackberry Lime Gin & Tonic Popsicles

Blackberry Lime Gin & Tonic Popsicles blend tart lime and juicy blackberries with the crisp, botanical snap of gin and tonic for a cool, lightly bitter-sweet treat. The fruit adds bursts of jammy flavor that balance the quinine’s gentle bite. Serve these boozy pops at summer parties or as a refreshing adults-only dessert after a backyard cookout.

Blackberry Lime Gin & Tonic Popsicles
  1. 1

In a small saucepan, combine the tonic water and sugar and bring to a boil over medium-high heat. Boil for 2 minutes, then remove from the heat. Stir in the gin and let it cool while you prepare the ice pops.

  2. 2

Cut the lime into 6 slices, then cut each slice in half. Place 2 pieces of lime in each mold and evenly distribute the berries among the molds.

  3. 3

Using a funnel, pour the tonic water mixture into the molds, leaving a 1/2-inch space at the top. Freeze for 8 hours, or overnight.
