Melt butter in a skillet over medium-low heat. Add onions and cook, stirring often, until golden brown. Keep cooking over medium-low heat until the onions deepen in color, 35 to 45 minutes; if they begin to burn, lower the heat. Once fully caramelized, take the skillet off the heat.

Preheat the oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.

Slice a pocket into the side of each chicken breast. Evenly fill the pockets with 1 or 2 slices of Gouda cheese (depending on the size of the breast) and 1 tablespoon caramelized onions.
