Warm olive oil and 1 tablespoon butter in a large skillet over medium-low heat. Add the onions and stir to coat. Cook, stirring occasionally, until they begin to caramelize and turn golden brown, 20 to 25 minutes. To speed caramelization and keep them moist, add water 1 tablespoon at a time as the onion mixture cooks.
