Velvety Caramelized Onion Pasta

    Fill a large pot with lightly salted water and bring it to a rolling boil. Stir in the pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 10 minutes, or as directed on the package.

    Meanwhile, add butter and oil to a deep skillet over high heat. Add the onions, and cook, stirring, until they develop a bit of color. Add the sugar, salt, pepper, vinegar, and water, and keep cooking over high heat, stirring constantly, until the onions are very tender and dark brown, about 15 minutes.

    Turn the heat down to low; add the milk, garlic, thyme, and grated Parmesan. Use an immersion blender to blend the sauce until smooth.

    Drain the pasta, reserving a little water to thin the sauce if needed. Stir the pasta into the sauce.
