Skillet Chicken Pasta

    Bring a large pot of water to a boil over high heat. Add the spaghettini and return to a boil. Cook the pasta until done but still slightly firm, 6 to 8 minutes. Drain well and keep it warm.

    Heat 2 tablespoons oil in a large skillet over medium heat. Add the tomatoes and cook until they soften and start to break down. Stir in the garlic powder, oregano, basil, salt, pepper, sugar, and ketchup. Heat the sauce through and set aside.

    Heat the remaining 3 tablespoons oil in a separate cast iron skillet over medium heat. Add the chicken and cook until browned. Stir in the garlic cloves and cook for 1 more minute.

    Remove the chicken from the skillet and set aside. Increase the heat to high. Add the bell peppers, onion, and mushrooms to the skillet and cook until they start to soften. Return the browned chicken to the skillet. Reduce the heat to medium and cook until the chicken is no longer pink in the center and the vegetables are cooked through, about 5 minutes.
