- 1
For the sauce, place the tomato, red bell pepper, habanero pepper, fresno chili, garlic, ginger, and water in a blender. Blend on high until smooth, then set aside.
- 2
Warm the olive oil in a saucepan over medium heat. Add the onion and salt and sauté until the onion begins to soften, 4 to 5 minutes. Make a space in the center of the pan, add the tomato paste, and sauté for 2 to 3 minutes. Sprinkle in the paprika, curry powder, cumin, thyme, pepper, and turmeric; cook another 1 to 2 minutes until everything is well combined.
- 3
Turn off the heat and stir in the rice, coating every grain with the oil-tomato mixture. Add the bay leaf and chicken bouillon paste.
- 4
Turn the heat to high, stir in the tomato sauce, and bring to a strong simmer. Cover with a tight-fitting lid, reduce the heat to medium-low, and simmer for 20 minutes. Do not remove the lid or stir the rice.
- 5
After 20 minutes, turn off the heat and set a timer for 12 minutes. Let the rice rest without removing the lid.
- 6
When the 12 minutes are up, remove the lid and fluff the rice with a fork, separating all the grains. Serve topped with green onions and chopped cilantro.
