Chef John's Whiskey Sour

Chef John's Whiskey Sour blends bold bourbon with bright, freshly squeezed lemon and a silky egg white foam for a velvety, balanced sip.     Prepare the simple syrup: In a small pan over medium heat, bring the sugar and water to a simmer, stirring occasionally, until the sugar dissolves.

    Pour it into a small bowl and let it cool completely before using, 15 to 20 minutes.

    Make the cocktail: Add 3/4 fluid ounce simple syrup, bourbon, lemon juice, bitters, and egg white to a large cocktail shaker.

    Cover with a smaller shaker or top and give it a dry shake without ice for about 30 seconds.

    Add 3 ice cubes to the bourbon mixture, cover, and shake vigorously until the shaker is very cold and the outside is frosty, about 45 seconds.
