    Whisk the egg yolks, soy sauce, cornstarch, salt, and pepper for the marinade in a bowl, then pour into a resealable plastic bag. Add the chicken, coat it with the marinade, press out excess air, and seal the bag. Marinate in the refrigerator for at least 20 minutes.

    Beat the egg whites for the coating in a bowl until foamy. Add the water, then the cornstarch, then the flour, mixing thoroughly after each addition.

    Stir together the hot water, sugar, rice wine, vinegar, cornstarch, soy sauce, bouillon granules, and salt for the glaze in a bowl.

    Take the chicken out of the refrigerator. Dip each piece into the coating.
