Chestnut Flour Crêpes (Gluten- and Wheat-Free)
  1. 1

Whisk the milk, eggs, and 1 tablespoon vegetable oil in a bowl until fully combined. Add the chestnut flour, 1/4 cup at a time, mixing until the batter is liquid and free of lumps. Whisk vigorously, then pour the batter through a fine-mesh strainer to remove any remaining lumps.

  2. 2

Heat vegetable oil in an 8-inch crêpe pan over medium-high heat. Pour 1/4 cup batter into the prepared pan and quickly rotate the pan so the batter forms a thin layer covering the entire surface.

  3. 3

Cook until the edges are browned and loosen easily with a spatula, 2 to 3 minutes per side. Transfer to a serving plate and repeat with the remaining batter.
