Colorado-Style Pork Chili

Colorado-Style Pork Chili features tender cubes of pork simmered in a chili-forward sauce with warm cumin, a hint of garlic, and a touch of tomato for balance. The light flour sear and quick roux give the broth body and a mellow richness. Serve it on a cool evening with warm tortillas or rice for a comforting dinner that satisfies without being heavy.

Put 3 tablespoons flour into a plastic bag. Add the pork and shake to lightly coat it with the flour; set aside.

  2. 2

Heat the bacon drippings and vegetable oil in a Dutch oven over medium-high heat. Add the pork and cook until the meat is evenly browned, about 5 to 8 minutes.

  3. 3

Stir in 1 tablespoon flour; cook and stir for 3 minutes. Add the onion, tomato sauce, chili powder, cumin, garlic powder, salt, pepper, and water. Bring to a boil; lower the heat to medium-low and simmer until the pork is just falling apart, about 1 1/2 to 2 hours.
