Classic Beef Empanadas

Classic Beef Empanadas

    Put the potatoes in a large pot, cover with water, and bring to a boil. Lower the heat to medium-low and simmer until just tender, about 8 minutes. Drain. When cool enough to handle, peel and cut into cubes. Set aside.

    Meanwhile, melt the butter in a large skillet and cook the onion and green onions until softened, about 5 minutes. Add the bell pepper and cook for 3 minutes. Add the ground beef; cook and stir until the beef is browned, about 5 minutes. Season with paprika, cayenne pepper, and salt.

    Take the beef mixture off the heat; add the potatoes and olives. Stir in the chopped hard-cooked eggs; let the filling cool, about 20 minutes.

    Preheat the oven to 425 degrees F (220 degrees C). Line 2 baking sheets with aluminum foil and lightly grease them with olive oil.

    Place an empanada pastry round on a flat surface and lightly moisten the edges with warm water. Put a large tablespoon of the cooled filling in the center and fold the dough over. Seal the edges by pressing with a fork. Repeat with the remaining rounds and filling. Move the empanadas to the prepared baking sheets and brush with beaten egg.
