In a bowl, combine cucumber, semolina flour, coconut, rice flour, green chile, ginger, and salt. Mix thoroughly. Add water and mix again. Let the batter rest for 30 to 45 minutes.

Heat a pan over medium heat and brush it with oil. Pour a ladleful of batter into the pan and spread it gently and evenly; the batter is not smooth, so you will not be able to spread it thin. Cook the dosa until the bottom is golden brown, about 1 minute. Flip and cook until the other side is golden brown, about 1 minute more. Repeat with the remaining batter.
