“Straight-from-the-Pot” Vegetarian Collard Greens

    Fill a large stockpot halfway with water; add the vinegar, seafood seasoning, and olive oil. Bring the liquid to a boil.

    Stir the collard greens, jalapeno peppers, and garlic into the boiling water; bring it back to a boil. Cover the stockpot, lower the heat to medium-low, and simmer until the greens are very tender, 3 to 4 hours.

    Drain the water from the greens and mash the garlic cloves; season with salt and pepper.
