Toaster-Perfect English Muffin Loaf Bread

Toaster-Perfect English Muffin Loaf Bread bakes into two tender loaves with that signature nooks-and-crannies crumb and a light cornmeal crunch on the crust. Each slice toasts up crisp at the edges with a soft, chewy center and mild, yeasty aroma. Ideal for breakfast toast, eggs Benedict, or hearty sandwiches any time of day.

  1. 1

Heat the milk and water in a small saucepan until very warm (125 degrees F/50 degrees C). Lightly grease two 8x4 inch loaf pans; sprinkle cornmeal inside the pans.

  2. 2

In a large bowl, combine 3 cups flour, yeast, sugar, salt, and soda. Stir the milk into the flour mixture; beat well. Add the remaining flour, 1 cup at a time, stirring until a stiff batter forms. Spoon the batter into the prepared pans. Cover and let rise in a warm place until nearly doubled in size, about 45 minutes. Meanwhile, preheat the oven to 400 degrees F (200 degrees C).

  3. 3

Bake in the preheated oven until golden brown, about 25 minutes. Remove from the pans immediately and cool.
