Fricase de Pollo

Fricase de Pollo features succulent chicken thighs and drumsticks simmered under pressure in a rich tomato, red pepper, and garlic sauce that’s deeply savory with gentle sweetness from the vegetables. The result is fall-off-the-bone meat with a glossy, spoonable gravy—perfect for weeknight dinners or casual gatherings. Traditionally served with arroz blanco and frijoles negros to soak up every drop.

Fricase de Pollo
  1. 1

Heat olive oil in a pressure cooker over medium heat. Add the red bell pepper and the onion; cook, stirring, until the onion softens and becomes translucent, about 5 minutes. Add the garlic and cook until golden.

  2. 2

Dissolve the tomato paste in 1 cup water and pour it into the pressure cooker. Arrange the chicken thighs and drumsticks in the pan so the pieces are evenly spaced. Add enough water to nearly cover the chicken.

  3. 3

Seal the pressure cooker and bring it up to pressure over high heat. Reduce the heat to low, keeping full pressure; cook for 15 minutes.

  4. 4

Turn off the heat and let the pressure drop naturally, about 20 minutes. Season the chicken with salt to taste.
