    Whisk the water and sugar in a bowl. Whisk in the yeast. Let it sit until the yeast softens and forms a creamy foam, about 10 minutes.

    Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

    In the bowl of a stand mixer fitted with the paddle attachment, combine the gluten-free flour, rice flour, Italian seasoning, xanthan gum, gelatin, and salt. Whisk the vinegar and olive oil into the yeast mixture, then pour it over the flour mixture. Mix on high speed until a wet, sticky dough forms, about 6 minutes.

    Transfer the dough to the prepared baking sheet. Place another sheet of parchment paper on top and smooth the dough to fill the baking sheet. Let the dough rest, about 10 minutes.
