Ham and Gruyère Gougères

Ham and Gruyère Gougères are feather-light cheese puffs with a gently crisp exterior and a tender, cheesy center dotted with savory ham. Ham and Gruyère Gougères

    Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.

    Combine water, butter, and salt in a saucepan and bring to a boil. As soon as it boils, remove from heat and add 1 cup plus 2 tablespoons flour all at once. Stir vigorously with a wooden spoon until fully combined. Add the eggs one at a time, beating well after each addition, until a smooth, sticky paste forms. Mix the Gruyere cheese and ham into the dough until evenly incorporated.

    Drop large tablespoonfuls of the dough onto the prepared baking sheet, leaving plenty of space between each portion, as the gougeres will rise during baking.

    Bake in the preheated oven until golden brown and puffed, about 20 minutes. Transfer the gougeres to a plate and let them cool.
