Ham and Gruyère Gougères
Ham and Gruyère Gougères are feather-light cheese puffs with a gently crisp exterior and a tender, cheesy center dotted with savory ham. The nutty Gruyère melts into the pâte à choux, adding depth that pairs perfectly with sparkling drinks. Serve warm as an elegant appetizer for parties, holiday spreads, or a refined brunch snack.

- 1
Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- 2
Combine water, butter, and salt in a saucepan and bring to a boil. As soon as it boils, remove from heat and add 1 cup plus 2 tablespoons flour all at once. Stir vigorously with a wooden spoon until fully combined. Add the eggs one at a time, beating well after each addition, until a smooth, sticky paste forms. Mix the Gruyere cheese and ham into the dough until evenly incorporated.
- 3
Drop large tablespoonfuls of the dough onto the prepared baking sheet, leaving plenty of space between each portion, as the gougeres will rise during baking.
- 4
Bake in the preheated oven until golden brown and puffed, about 20 minutes. Transfer the gougeres to a plate and let them cool.
