In a large bowl, stir together the salt, chili powder, garlic powder, onion powder, ginger, black pepper, and cayenne pepper; add the ground beef and mix thoroughly.

Run the beef mixture through a meat grinder fitted with the finest blade.

Preheat the oven to 250 degrees F (120 degrees C). Set wire racks on baking sheets.

Place 1/2 of the ground beef mixture between two sheets of heavy plastic on a solid, level surface. Roll the beef mixture firmly to a thickness of 1/8 inch. Remove the top sheet of plastic wrap, invert the beef mixture onto the prepared baking sheet, and peel off the bottom sheet of plastic wrap. Repeat with the remaining beef mixture.

Bake the beef mixture in the preheated oven with the door slightly open for 2 1/2 hours. Rotate the baking sheet. Continue baking until the jerky is cooked through, another 3 hours. Remove the jerky from the oven and slice into strips while warm.
