Hatch Chile Corn

Hatch Chile Corn

    Preheat an outdoor grill to medium heat and lightly oil the grate.

    Grill the corn and the chile pepper over the preheated grill until the corn is lightly charred and the chile pepper is blistered, about 20 minutes.

    Place the chile pepper in a resealable plastic bag. Let it steam until softened, about 5 minutes. Peel off the skin from the chile pepper and chop it.

    Cut the corn kernels off the cob into a large bowl. Stir in the chopped chile pepper, goat cheese, lime juice, salt, and black pepper.
