    Turn on a multi-functional pressure cooker (such as an Instant Pot) and choose the Sauté setting. When the display shows the pot is hot, add coconut oil and allow it to melt.

    Add popcorn and stir with a rubber spatula until the kernels are coated. Wait 30 seconds and stir again; the kernels should be sizzling now. Cover the pot with the glass lid and cook for 5 minutes. Cancel Sauté mode and let it sit until the popping fully stops, about 1 minute.
