    Bake in the preheated oven until they are tender when pierced with a knife, about 1 hour. Set them aside until cool enough to handle. Do not turn off the oven.

    Place the bacon in a cold skillet over medium-high heat and cook until the fat starts to render; stir. Reduce the heat to medium. Continue cooking, stirring occasionally, until the fat is fully rendered and the bacon is browned and fully cooked. Drain the drippings from the skillet and reserve them for another use.

    Scoop the sweet potato flesh into a mixing bowl and discard the skins. Use a spoon to break the sweet potato into smaller, more uniform pieces. Make the texture as smooth or as coarse as you prefer.

    Add ½ bacon, ¾ cup green onions, ⅔ cheese, ½ cup sour cream, egg, salt, smoked paprika, and black pepper, then stir until evenly combined.
