- 1
Assemble all the ingredients.
- 2
Preheat the oven to 350 degrees F (230 degrees C). Grease a 2-quart square baking dish.
- 3
Cook the bacon in a large skillet until crisp, about 8 minutes. Drain on paper towels. When cool enough to handle, crumble the bacon. Pour off all but 2 tablespoons of the bacon drippings from the skillet.
- 4
Add the onion to the skillet. Cook and stir until tender, about 5 minutes.
- 5
Add the flour and cayenne pepper to the skillet; cook and stir for 1 minute.
- 6
Add 2 cups milk to the skillet. Cook and stir until thickened and bubbling, about 3 minutes.
- 7
Gradually add 1 cup cheese to the skillet, stirring until melted. Stir in half of the green onions.
- 8
Place 1/2 cup sour cream in a small bowl. Gradually whisk in about 1/2 cup of the hot sauce mixture. Return the mixture to the skillet and bring back to a simmer.
- 9
Add half of the tots to the prepared baking dish. Top with half of the sauce and half of the bacon. Add the remaining tots, the remaining sauce, the remaining bacon, and the remaining cheese.
- 10
Bake until bubbly and the cheese on top is lightly browned, 35 minutes.
- 11
For the dill cream, whisk together 1/4 cup sour cream, 1 tablespoon milk, and dill.
- 12
Drizzle over the casserole and sprinkle with the remaining green onions.
