  2. 2

Pat dry, then cut into 1/2 inch dice.

  3. 3

Pour the vegetable oil into a large, heavy-bottomed pot and set over medium-high heat.

  4. 4

Season the flour with salt and pepper to taste in a bowl.

  5. 5

Toss the kidney and stew meat in the flour, then shake off any excess.

  6. 6

Sear the meat in the hot oil until well browned, then remove it.

  7. 7

Add the bacon to the pot and cook until crisp.

  8. 8

Stir in the onion and mushroom and cook until softened, about 2 minutes.

  9. 9

Pour in the beef stock, wine, and browned meat; bring to a boil, stirring constantly, until the mixture begins to thicken, about 5 to 10 minutes.

  10. 10

Reduce the heat to low and simmer for 1 1/2 to 2 hours, until the meat is tender.

  11. 11

Remove from the heat and cool to room temperature.

  12. 12

Place the potatoes in a saucepan with enough water to cover and set over high heat.

  13. 13

Bring to a boil, then reduce the heat to medium-low and simmer until the potatoes are tender, about 20 minutes.

  14. 14

Drain, then mash with the butter and milk; season with salt and pepper.

  15. 15

    Allow to cool.

  16. 16

Preheat the oven to 375 degrees F (190 degrees C).

  17. 17

Press one sheet of the puff pastry into a 9 inch pie dish and trim the edges to fit.

  18. 18

Fill with the cooled meat mixture.

  19. 19

Spread the mashed potatoes over the top, about one inch thick.

  20. 20

Place the remaining sheet of puff pastry over the top of the pie.

  21. 21

Trim the excess pastry around the edges, then crimp the edges with a fork.

  22. 22

Brush the top with the beaten egg.

  23. 23

Bake in the preheated oven for 20 to 25 minutes, or until the crust is golden.
