  1. 1

Stir the sour cream, sorrel, lime juice, 1 teaspoon salt, and sugar together in a bowl until well combined. Refrigerate until needed.

  2. 2

In the bowl of a stand mixer, combine the flour, masa harina, baking powder, and 2 teaspoons salt. With the mixer on the lowest speed, gradually pour in the butter and water; mix until the dough just begins to come together.

  3. 3

Turn the dough out onto a clean, flat surface and knead it 3 to 4 times. Divide the dough into 1 1/2 ounce balls, cover them, and let rest for 1 hour.

  4. 4

Press each dough ball using a tortilla press lined with parchment paper or plastic wrap; move each pressed tortilla to a baking sheet.

  5. 5

Lightly coat a cast-iron pan with 1/2 teaspoon vegetable oil and heat over medium-high. Place a tortilla in the pan and cook until lightly golden, about 1 minute per side. Repeat with the remaining tortillas.

  6. 6

Heat 1/4 cup vegetable oil in a skillet over high heat. Stir in the chicken and cook until browned on the edges, 4 to 6 minutes. Add the onion, kale, 1 teaspoon salt, and pepper; reduce the heat to medium-high. Cook, stirring often, until the kale is wilted, 3 to 5 minutes. Remove from the heat.

  7. 7

Spoon the chicken-kale mixture into each tortilla, top with the sorrel sour cream, and serve.
