    Bring a pot of water to a boil; add the chicken and cook until it is no longer pink in the center, 20 to 25 minutes. Transfer the chicken to a work surface and let it cool until easy to handle.

    Heat olive oil in a skillet over medium heat; cook and stir the onion for about 3 minutes. Add the red bell pepper; cook and stir until the onion and pepper are softened, about 10 minutes. Add the garlic; cook and stir until fragrant, about 1 minute. Cover the skillet and cook the onion mixture until slightly browned, 5 to 10 minutes.
